Following on from one of my earlier posts about how I succeeded in cooking salmon from its frozen state, here is the super easy recipe that you can follow! This recipe was adapted from, an initiative from Alaska to educate people about cooking frozen seafood Enjoy!

Servings: 4

Ingredients: 4 Alaska Salmon steaks or fillets (250g each) 1/2 lemon 2 cups shredded hash browns or fresh shredded potato 1/2 cup condensed cream of broccoli or cream of mushroom soup, undiluted 3/4 cup shredded Cheddar cheese, divided 1/2 teaspoon garlic salt 1/2 teaspoon dried minced onion

Directions: 1. Heat oven to 400 degrees Fahrenheit. 2. Line tray with aluminum foil and coat with nonstick cooking spray. 3. Rine any ice glaze from frozen Alaska Salmon under cold water; pat dry with paper towel. 4. Place salmon portions on pan, spacing evenly. 5. Squeeze lemon over salmon. 6. Combine hash browns, condensed soup, garlic salt, onion, blend thoroughly. 7. Top each salmon portion with 1/4 of potato mixture. 8. Bake 20 to 25 minutes for frozen salmon OR 15 to 20 minutes for fresh/thawed fish. Cook just until fish is opaque throughout.
