Established in 1932, Pat Chun (八珍), meaning “eight delicious dishes worthy of the emperor,” is an operation that's been passed down through three generations. Pat Chun is well-known in Hong Kong and Singapore for their naturally fermented, pickled and cooked foods from traditional recipes.

Ingredients: Garlic (Contains Naturally Formed Sulphites), Water, Soybean, Shallot, Canola Oil, Black Soybean, Wheat Flour, Sugar, Chinese Plum, Ginger, Rice Vinegar, Salt, Modified Starch, Rice Wine

The sauce is brewed with Pat Chun’s slow fermented black bean paste, which is stir-fried with garlic, plum and ginger. This sauce is used to deliver a burst of savoury umami to steamed fish or stir-fried fish slices and shellfish.
