The fish was slightly below normal temperature when I received it

May I suggest to put more ice into the bag and not one small pack of ice. Fish was defrost and was not cold at all. Can smell the fish

Fresh & beautifully filleted

Ordered the sable and there were 6 fillets vacuum packed, the head and very meaty bones that arrived chilled. I panfried the fillets with a little butter and they cooked really well in their own oil. 3 fillets were very filling and enough to feed our family of 4. I grilled the bones and made a hearty soup. Delicious! Happy with my purchase and will order again.

A cheaper 雪鱼

Meat is sweet and fatty. Similar to the Chilean Sea bass. Meat is softer melt in your mouth and not QQ like a Chilean seabass which is fine as sable fish is cheaper.
Don't know what to do with the head and bones mayb put in airfryer and see if it becomes crispy.
