Hong Kong-Style Steamed Chinese Pomfret

Steamed Chinese pomfret is a nutritious and flavorful dish that is especially beneficial for postpartum recovery. The recipe leverages simple ingredients to enhance the delicate taste of the pomfret while providing essential nutrients for new mothers.

Ingredients:

  • 1 whole Chinese pomfret (about 500g), cleaned and scaled
  • 3-4 slices of ginger
  • 2 stalks of spring onions (cut into 3-inch lengths)
  • 2 cloves garlic (finely chopped)
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (optional)
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • Fresh coriander for garnish
  • Fresh chilli for garnish

Instructions:

  1. Prepare the Pomfret:

    • Rinse the pomfret under cold water and pat dry with a paper towel.
    • Make 2-3 diagonal cuts on each side of the fish to allow for better seasoning penetration.
  2. Marinate the Fish:

    • Rub the fish with a little salt (optional) and place ginger slices in the cuts and inside the cavity of the fish.
  3. Prepare the Steamer:

    • Set up a steamer or a large pot with a steaming rack and bring water to a boil.
  4. Steam the Fish:

    • Place the spring onions on a heatproof plate and lay the pomfret on top.
    • Drizzle the Shaoxing wine over the fish.
    • Steam the fish over high heat for about 10-12 minutes, or until the flesh is opaque and flakes easily with a fork.
  5. Prepare the Sauce:

    • In a small pan, heat the vegetable oil over medium heat.
    • Add the chopped garlic and sauté until fragrant and golden brown.
    • Remove from heat and add soy sauce and sesame oil. Mix well.
  6. Finish and Serve:

    • Once the fish is cooked, carefully remove it from the steamer.
    • Pour the hot sauce over the steamed fish.
    • Garnish with fresh coriander, sliced chilli and serve immediately.
