Serves 2-4 people.

Our curry mix has been specially put together to bring out the best in fresh fish. It is the same recipe used for our curry fish head recipe at our cooking studio at West Coast Plaza.
Cooking instructions: Add two tablespoons of oil and heat up in a pot. Stir in all the ingredients except for the coconut oil for 3-5mins, add in the entire pack of coconut milk and two portions of water (using the coconut milk packet as a gauge for one portion), add in Stingray and steam for 10-15 minutes (or until cooked).
